This recipe dates back to the time of the Aztecs, since this is a dish made from the best of the summer harvest including vine-ripened tomatoes, fresh corn, and abundant zucchini. Mexican zucchini are smaller and lighter in color than their Italian cousins, although the flavor is similar. Traditionally, the vegetables were cooked in lard, but I prefer the vegetarian version.

This is made from the irresistible produce that becomes available in quantity in the garden and markets at the end of the summer - luscious tomatoes, bell peppers in all colors, shiny eggplants, zucchini and herbs. This is delicious cold or hot, and topped with fried eggs. If you can't obtain ripe tomatoes, increase the intensity of the flavor by adding a tablespoon of tomato paste toward the end of cooking. Serve this with anything Provencale. Or make it a main dish and serve with a foccacia or Boboli bread and a leafy green salad. |

This is just a bare outline of a really quick and easy soup that cries out for personalization: Add any of the ingredients from the options list as you see fit (if you're using raw veggies, saute them briefly in the pot before adding all the other ingredients). Use pinto beans or kidney beans instead of black beans. Omit the rice. You get the idea. And the proportions are just an outline too--if you use less stock, for instance, this "soup" will be very thick and can be used as a dip for tortilla chips or as a filling for burritos, etc. |

This fabulous recipe is well worth the trouble. It is great even when you can't get every single ingredient. The servings are generous, since is is intended to be a vegetarian meal or to be served with fish or chicken.
